      Air Fryer Rice & Beans Stuffed Peppers

      If you want a tasty, fresh, and cozy meal that your whole family can enjoy, try air fryer stuffed peppers! The bell peppers in this recipe are filled with rice and beans, giving it a vegan taste, but peppers can be filled with ground turkey or chicken for meat lovers.

      These peppers get a little crisp from the air fryer, while the inside of them stays moist and tasty. The air fryer prevents the bottoms of the peppers from becoming soggy. This is why I like using my air fryer to make these bell peppers!

      What Type of Bell Peppers is suitable for This Recipe?

      Bell peppers have a wonderful crisp flavor and texture. However, this flavor varies depending on the color of the pepper. Bell peppers that are green in color have a somewhat bitter flavor that sweetens as the peppers cook and blend well with other flavorings. The sweetest ones from bell pepper are red peppers, while orange and yellow are also very sweet. Whatever type of pepper you use, this air fryer stuffed bell peppers recipe will be a hit with all of these types.

      What Stuffing Should I Use?

      You can fill these air fryer stuffed bell peppers with almost any stuffing you want to taste, or you can imagine. Mostly, these bell peppers are filled with a combination of protein and rice (just like I did in this recipe), but you can also customize these peppers with your favorite chopped vegetable, grains, and meats.

      How to Store These Bell Peppers?

      Whether you want to store their stuffing or the whole bell peppers, always allow the thing to cool down to room temperature before storing it. These bell peppers can become soggy and mushy when stored while still warm. So, let the bell peppers cool down and then store them in the refrigerator in an airtight container, but use them within 4 days of storing them.

      Ingredients
        

      • Non-Stick Cooking Spray
      • ½ small bell pepper seeded and chopped
      • 1 (15-ounce) can diced tomatoes with juice
      • 1 (15-ounce) can black beans, rinsed and drained
      • 1 cup cooked rice
      • 1 ½ tsp Italian seasoning
      • 5 large bell peppers tops removed and seeded
      • ½ cup mozzarella cheese shredded
      • 1 tbap Parmesan cheese grated

      Instructions
       

      • In a bowl, mix together the chopped bell pepper, tomatoes with juice, beans, rice, and Italian seasoning.
      • Stuff each bell pepper with the rice mixture.
      • Grease the Air Fryer Basket with cooking spray and then slide inside.  
      • Adjust the temperature of Air Fryer to 360 °F to preheat for 5 minutes.
      • After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
      • Slide the basket into Air Fryer and set the time for 15 minutes.
      • Meanwhile, in a bowl, mix together the mozzarella and Parmesan cheese.
      • After 12 minutes of cooking, top each bell pepper with cheese mixture.
      • After cooking time is finished, remove the bell peppers from Air Fryer and serve.
