      Suppose you are thinking of baking cookies in an air fryer. In that case, go for the air fryer shortbread fingers.  

      Don’t look so surprised. Definitely! Yes, you can bake cookies in an air fryer, and they are delicious.

      These air fryer shortbread fingers are the ideal cookie for any occasion! If you haven’t tried baking them in your air fryer, you’re missing out on a mouth-watering dessert. Air fryer shortbread fingers are pretty simple to make, and there are only three ingredients you need to make them.

      But did you know that this recipe of a three-ingredient Christmas Scottish cookie may also be used as a base for various cookies? With any cookie cutters, you may shape it for any season.

      Why Should You Make Shortbread Fingers in an Air Fryer?

      I honestly love air-fried shortbread fingers. I’m not sure I said it loud enough, but I find them irresistible! The way they melt on your tongue, how they crumble as you gobble them, how rich in taste they are due to the butter, and, of course, how simple they are to make.

      What Is Shortbread, Exactly?

      If you’re unfamiliar with shortbread, it’s a Scottish biscuit or cookie as it’s known in the United States. Shortbread is a delicious, buttery treat that is great for afternoon tea and is well-known all over Scotland and the world.

      Butter, sugar, and flour are the only ingredients in shortbread. Because of the high butter content, it holds together without milk or eggs.

      Can You Store the Air Fryer Shortbread Fingers?

      In an airtight container, homemade cookies can last up to 5 days. These shortbread fingers can be stored in a cookie container on the kitchen counter without needing to be refrigerated.

      Transfer to a cooling rack after baking and let them cool entirely before stocking up in an airtight cookie container.

      Ingredients
        

      • Non-Stick Cooking Spray
      • 1 ⅔ cups plain flour
      • ⅓ cup caster sugar
      • ¾ cup butter

      Instructions
       

      • Lightly grease a baking sheet with cooking spray. Set aside.
      • In a large bowl, mix together the flour and sugar.
      • Add the butter and mix until a smooth dough forms.
      • Cut the dough into 10equal-sized fingers.
      • With a fork, lightly prick the fingers.
      • Arrange fingers into the prepared baking sheet in a single layer.
      • Slide the Air Fryer Basket inside and adjust the temperature to 355 °F to preheat for 5 minutes.
      • After preheating, arrange the baking sheet into the Air Fryer Basket.
      • Slide the basket into Air Fryer and set the time for 12 minutes.
      • After cooking time is finished, remove the baking sheet from Air Fryer and place onto a wire rack to cool for about 5-10 minutes.
      • Invert the shortbread fingers onto wire rack to completely cool before serving.
