These veggie pastries have been air-fried to obtain flawlessly cooked golden dough with a soft filling of potato, peas, and carrots.

Can I Make Veggie Pastries at Home?
Yes. Most people are intimidated by pastries, although they are one of the most accessible snacks to prepare. There are only two components to making a veggie pastry – the filling and the puff pastry. Both the components are made from common ingredients.
With ready-made puff pastries available in the market, you only have to mind the filling. Boil some potatoes, mash them, sauté them with other veggies and add seasonings to the mix. Nothing could be more straightforward.
I’ve used the same filling to wrap in tortillas, stuff grilled sandwiches, and make enormous vegetable burger patties.
How to Store and Freeze the Puff Pastries?
Storage: Once cooked and cooled, these pasties can be stored in the fridge for up to 5 days. Simply reheat till fresh all the way through in the microwave, oven, or air fryer.
Freezing: There are two ways to freeze them. You may assemble the puff pastries and then freeze them individually wrapped in clingfilm. These will have to be cooked from frozen. Alternatively, you can air fry or bake the pastries, then freeze them after they have been cooled.
How Should I Reheat Puff Pastries in An Air Fryer?
Spread the frozen pastries in a uniform layer in the air fryer basket (make sure they don’t overlap). There’s no need to use any oil spray. Air fry for 8 minutes at 360°F. Flip the pastries and continue to Air Fry at the same temperature for another 6-8 minutes.

Air Fryer Veggie Pastries
Ingredients
- 2 large potatoes peeled
- 1 tbsp olive oil
- ½ cup carrot peeled and chopped
- ½ cup onion chopped
- 2 cloves garlic minced
- 2 tbsp fresh ginger minced
- ½ cup green peas shelled
- as required salt and ground black pepper
- 3 puff pastry sheets
- Non-Stick Cooking Spray
Instructions
- In the pan of boiling water, cook the potatoes for about 15-20 minutes.
- Drain the potatoes well and transfer into a bowl.
- With a potato masher, mash the potatoes.
- In a non-stick skillet, heat the oil over medium heat and sauté the carrot, onion, ginger, and garlic for about 4-5 minutes.
- Drain all the grease from the skillet.
- Stir in the mashed potatoes, peas, salt, and black pepper and cook for about 1-2 minutes.
- Remove the potato mixture from heat and set aside to cool completely.
- Place the puff pastry onto a smooth surface.
- Cut each puff pastry sheet into four pieces and then cut each piece in a round shape.
- Place about two tablespoons of veggie filling over each pastry round.
- With your wet fingers, moisten the edges of pastry round and then fold in half to seal the filling.
- With a fork, firmly press the edges.
- Grease the Air Fryer Basket with cooking spray and then slide inside.
- Adjust the temperature of Air Fryer to 390 °F to preheat for 5 minutes.
- After preheating, arrange 4 pastries into the greased Air Fryer Basket in a single layer.
- Slide the basket into Air Fryer and set the time for 5 minutes.
- After cooking time is finished, remove the pastries from Air Fryer.
- Repeat with the remaining pastries.
