      Yes, you should keep the lemon bars in the refrigerator to keep them firm. Simply wrap them in plastic and store them in the fridge. Lemon bars can be stored in this way for about a week.

      Why Lemon Bars Turn Out Runny?

      Under baking is the most likely cause of runny lemon bars. Before removing the filling from the oven, ensure it no longer jiggles. If your lemon bars are still runny, place them in the refrigerator to firm up as much as possible; keeping them cold will keep them firm.

      Ingredients
        

      • 2 cups all-purpose flour
      • 1 cup butter softened
      • ½ cup white sugar
      • ¼ cups all-purpose flour
      • 1½ cups white sugar
      • 4 eggs
      • 3-4 tbsp fresh lemon juice

      Instructions
       

      • Preheat your oven to 350 °F.
      • For crust: in a medium bowl, add flour, butterand sugar and mix until well combined.
      • Place the mixture into an ungreased 9x13-inchbaking dish and with the back of a spoon, press into the bottom
      • Bake for about 15 minutes.
      • Meanwhile, for filling: in a bowl, add sugarand flour and mix well.
      • Add eggs and beat until well combined.
      • Add in the lemon juice and beat until smooth.
      • Place the filling over the baked crust evenly.
      • Bake for about 20 minutes.
      • Remove the baking dish of bars from oven andset aside to cool completely.
      • Cut into equal-sized bars and serve.

      Notes

      Make sure to use freshly squeezed lemon juice.
