      Matcha swiss roll cake is a traditional Japanese dessert featuring layers of light, fluffy sponge cake rolled with a generous helping of sweet matcha cream. The result is a beautiful, mouthwatering dessert that will impress anyone who tries it.

      What Ingredients Do I Need?

      The sponge cake requires the following ingredients: almond flour, powdered sugar, matcha powder, psyllium husk powder, baking powder, eggs, heavy whipping cream, butter, and vanilla extract. For the filling, you’ll need unflavored gelatin, heavy whipping cream, vanilla extract, and powdered sugar. You will also need a few items for decoration, such as edible flowers or strawberries (optional).

      How Long Does It Take To Make?

      Making the cake doesn’t take too long—just 30 minutes or so of preparation and baking time. The real challenge lies in rolling the cake with the cream inside—this can take up to 20 minutes, depending on how careful you are when rolling it up!       Ingredients
        

      • 1 cup almond flour
      • ½ cup powdered sugar
      • ¼ cup matcha powder
      • ¼ cup psylliun husk powder
      • ½ tsp baking powder
      • ½ tsp salt
      • 3 large eggs
      • ½ cup heavy whipping cream
      • 4 tbsp butter melted
      • 1 tsp vanilla extract
      • 3-4 tbsp water
      • 1 packet unflavoured gelatin
      • 2 cups heavy whipping cream
      • 2 tsp vanilla extrat
      • ¼ cup powdered sugar

      Instructions
       

      • Preheat your oven to 350 ºF.
      • Line a baking sheet with parchment paper.
      • For cake: in a bowl, sift together almondflour, sugar, matcha powder, psyllium husk, baking powder and salt.
      • In a third bowl, add remaining ingredientsand beat until well combined.
      • Add the egg mixture into the bowl of flourmixture and mix until a very thick dough forms.
      • Place the dough onto theprepared baking sheet and roll into an even rectangle.
      • Bake for approximately 10 minutes.
      • Remove from oven and put onto a wire rack tocool for about 4-5 minutes.
      • Gently, roll the warm cake with the help ofparchment paper.
      • Set aside to cool completely.
      • For filling: in a microwave-safe bowl, addthe water and sprinkle with the gelatin. Set aside for about 5 minutes.
      • Now, microwave for about 15-20 seconds.
      • Remove from microwave and beat the gelatinmixture until smooth.
      • Place gelatin mixture and remainingingredients in bowl of the stand mixer and beat until cream becomes stiff.
      • Spread the whipped cream over cooled cakeevenly.
      • Carefully and gently, roll the cake andfreezer for about 10 minutes before slicing.
      • Cut into desired-sized slices and serve.

      Notes

      Matcha cake roll can be kept in the fridge in an air-tight container for2-3 days.
