      Ingredients
        

      • ¼ cup luke warm water
      • 1(14-ounce) can unsweetened coconut milk
      • 1 tbsp gelatin powder
      • 1(14-ounce) can pumpkin
      • 3 tbsp sugar
      • 2 tsp vanilla extract
      • 1 tsp ground cinnamon
      • ¼ tsp ground ginger
      • ⅛ tsp ground cloves
      • ⅛ tsp salt

      Instructions
       

      • In a pan, add the warm powder and gelatin and stir until wellcombined.
      • Set aside for about 5 minutes.
      • Meanwhile, in a pan, add the coconut milk, pumpkin, sugar,vanilla extract, spices and salt and cook for about 2-3 minutes.
      • Remove the pan of pumpkin mixture from the heat.
      • In the pan, add the gelatin mixture and beat until wellcombined and smooth.
      • Transfer the pudding into the serving bowls evenly.
      • With 1 plastic wrap, cover each bowl and refrigerate until setcompletely.
