Vanilla Muffins

Ingredients
  

  • Non-Stick Cooking Spray
  • ¾ cup coconut flour
  • 2 tbsp coconut sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 4 large egg
  • 1 cup unsweetened applesauce
  • ½ cup milk
  • 2 tbsp unsalted butter softened
  • 1-1½ tsp vanilla extract

Instructions
 

  • Preheat theoven to 350 °F.
  • Grease a 12cups standard-sized muffin tin with cooking spray.
  • In afood processor, add all ingredients and pulse until smooth.
  • Place the mixture into the prepared muffin cups evenly.
  • Bake for about 30-32 minutes or until a toothpick inserted in the centercomes out clean.
  • Remove the muffin tin from oven and place ontoa wire rack to cool for about 10 minutes.
  • Invert the muffins onto the wire rack to coolcompletely before serving.

Notes

For a fancier look, you can drizzle the cooled muffins with vanilla glaze.
