Blueberry Donuts

Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • ½ cup buttermilk
  • 2 tbsp unsalted butter melted
  • 1 cup fresh blueberries
  • 1 cup confectioner'ssugar
  • ½ tsp pure vanilla extarct
  • 2-3 tbsp milk

Instructions
 

  • Preheat your oven to 350 °F.
  • Generously grease a donut pan with cooking spray.
  • For donuts: in a large bowl, add the flour, sugar, baking powder and salt and witha wire whisk, mix well.
  • In another small bowl, add egg, buttermilk and butter and beat until wellcombined.
  • Add the egg mixture into the bowl of flour mixture and mix until just combined.
  • Gently fold in the blueberries.
  • Place the mixture into the prepared holes of donut pan about ¾ of full.
  • Bake for approximately 20-22 minutes or until golden brown.
  • Remove the donut pan from oven and set aside for at least 5 minutes to cool.
  • Carefully remove the donuts from each hole and place onto a platter to cool completely.
  • Meanwhile, for glaze: ina bowl, add all the ingredients and beat until well blended.
  • Spread the glaze over donuts and serve.

Notes

You can also use sour cream instead of buttermilk.
