Instructions
For brine: in a large pitcher, dissolve sugar and salt in water.
Place the chickenbreasts in brine and refrigerate for about 2 hours, flipping once halfwaythrough.
Preheat the Smoker to 230 °F, using charcoal and woodchips.
Remove chickenbreasts from the brine and rinse under cold running water.
Season chicken breastswith rub generously.
Arrange 3 bacon strips of bacon onto a cutting board, againsteach other.
Place 1 chicken breast across thebacon, leaving enough bacon on the left side to wrap it over just a little.
Wrap the bacon strips aroundchicken breast and secure with toothpicks.
Repeat with remaining breasts andbacon slices.
Arrange the chicken breasts in smoker and cook, covered for about 2½hours.
Coat the breasts with BBQ sauce and cook for about 30 minutes more.
Serve immediately.
Notes
Use low-sodium bacon slices to avoidextra saltinessin chicken.
