Instructions
Season the chicken with salt and black pepperevenly.
In a large cast-iron skillet, heat 1tablespoon of oil over medium-high heat and cook the chicken tenderloins forabout 3 minutes per side.
With a slotted spoon, transfer the chickentenderloins onto a plate.
Cut the chicken tenderloins into bite-sized pieces.
In the same skillet, heat the remaining oilover medium heat and cook the mushrooms for about 5-7 minutes, stirringoccasionally
With a slotted spoon, transfer the mushroomsonto a plate.
In the same skillet, add the onionand sauté for about 3 minutes.
Add the sun-dried tomatoes and garlic andsauté for about 2 minutes.
Stir in tomatoes, sugar and dried herbs andstir to combine.
Place the chickentenderloins on top of beans mixture in a single layer.
With a spoon, place some beans mixture on topof the chicken and cook, covered for about 10 minutes.
Stir in the mushrooms and cook for about 1-2minutes or until heated through.
Serve hot with the garnishing of parsley.
Notes
This meal will be great if served with crusty bread.
