Coconut Jelly

Ingredients
  

  • 2 eggs
  • cups coconut cream
  • ¼ cup palm sugar
  • 1 tablespoon agar-agar powder
  • cups water
  • ½ cup white sugar

Instructions
 

  • For custard: in a large-sized bowl, add the eggs, coconut cream and palm sugar and with a wire whisk, beat until well combined.
  • Through a fine mesh sieve, strain the mixture into another bowl. Set aside.
  • In a small-sized saucepan, add the water and agar-agar powder over medium heat and cook for approximately 2-3 minutes, stirring continuously.
  • Add in the white sugar and cook for approximately 2-3 minutes, stirring continuously.
  • Stir the custard and cook for approximately 2 minutes, stirring continuously.
  • Transfer the mixture into molds and refrigerate for approximately 2 hours before serving.

Notes

For added flavor, you can add 1 teaspoon of vanilla extract.
