Air Fryer Veggie Pastries

These irresistibly tasty veggie pastries are made with a blend of veggies.

Ingredients
  

  • 2 large potatoes peeled
  • 1 tbsp olive oil
  • ½ cup carrot peeled and chopped
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • 2 tbsp fresh ginger minced
  • ½ cup green peas shelled
  • as required salt and ground black pepper
  • 3 puff pastry sheets
  • Non-Stick Cooking Spray

Instructions
 

  • In the pan of boiling water, cook the potatoes for about 15-20 minutes.
  • Drain the potatoes well and transfer into a bowl.
  • With a potato masher, mash the potatoes.
  • In a non-stick skillet, heat the oil over medium heat and sauté the carrot, onion, ginger, and garlic for about 4-5 minutes.
  • Drain all the grease from the skillet.
  • Stir in the mashed potatoes, peas, salt, and black pepper and cook for about 1-2 minutes.
  • Remove the potato mixture from heat and set aside to cool completely.
  • Place the puff pastry onto a smooth surface.
  • Cut each puff pastry sheet into four pieces and then cut each piece in a round shape.
  • Place about two tablespoons of veggie filling over each pastry round.
  • With your wet fingers, moisten the edges of pastry round and then fold in half to seal the filling.
  • With a fork, firmly press the edges.
  • Grease the Air Fryer Basket with cooking spray and then slide inside.  
  • Adjust the temperature of Air Fryer to 390 °F to preheat for 5 minutes.
  • After preheating, arrange 4 pastries into the greased Air Fryer Basket in a single layer.
  • Slide the basket into Air Fryer and set the time for 5 minutes.
  • After cooking time is finished, remove the pastries from Air Fryer.
  • Repeat with the remaining pastries.
