In the pan of boiling water, cook the potatoes for about 15-20 minutes.
Drain the potatoes well and transfer into a bowl.
With a potato masher, mash the potatoes.
In a non-stick skillet, heat the oil over medium heat and sauté the carrot, onion, ginger, and garlic for about 4-5 minutes.
Drain all the grease from the skillet.
Stir in the mashed potatoes, peas, salt, and black pepper and cook for about 1-2 minutes.
Remove the potato mixture from heat and set aside to cool completely.
Place the puff pastry onto a smooth surface.
Cut each puff pastry sheet into four pieces and then cut each piece in a round shape.
Place about two tablespoons of veggie filling over each pastry round.
With your wet fingers, moisten the edges of pastry round and then fold in half to seal the filling.
With a fork, firmly press the edges.
Grease the Air Fryer Basket with cooking spray and then slide inside.
Adjust the temperature of Air Fryer to 390 °F to preheat for 5 minutes.
After preheating, arrange 4 pastries into the greased Air Fryer Basket in a single layer.
Slide the basket into Air Fryer and set the time for 5 minutes.
After cooking time is finished, remove the pastries from Air Fryer.
Repeat with the remaining pastries.
