In a bowl, mix together the flours, pumpkin seeds, salt and yeast and mix well.
Slowly, add desired amount of water and mix until a soft dough ball forms.
With your hands, knead the dough until smooth and elastic.
Place the dough ball into a bowl.
With plastic wrap, cover the bowl and set aside in a warm place for 30 minutes or until doubled in size.
Grease a round cake pan with cooking spray.
Place the dough ball into the prepared cakepan and brush the top of the dough with water.
Slide the Air Fryer Basket inside and adjust the temperature to 350 °F to preheat for 5 minutes.
After preheating, arrange the cake pan into the Air Fryer Basket.
Slide the basket into Air Fryer and set the time for 18 minutes.
After cooking time is finished, remove the cake pan from Air Fryer and place onto a wire rack for about 10-15 minutes.
Invert the bread onto the wire rack to cool completely cool before slicing.
Cut the bread into desired-sized slices and serve.
