Ingredients
  

  • Non-Stick Cooking Spray Do not over-bake the custard.
  • 2 large ripe bananas peeled and mashed finely
  • 14 ounces unsweetened coconut milk
  • 3 eggs
  • ½ tsp vanilla extract

Instructions
 

  • Preheat your oven to 350 ºF.
  • Lightly grease 8 (6-inch) custard glasses with cooking spray.
  • Arrange the glasses in a large baking dish.
  • In a large bowl, add all ingredients and mix until wellcombined.
  • Divide the banana mixture inprepared glasses evenly.
  • Pour water in the bakingdish, about halfway full.
  • Bake for approximately 20-25minutes.
  • Serve warm.
