Chocolate Chip Bars

Chocolate chip bars are the perfect treat to enjoy at a dessert party! These soft and moistbars are full of chocolatey goodnesswith nice notes of dates, oats and chia seeds.

Ingredients
  

  • cups rolled oats
  • 1 cup creamy peanut butter plus 2 tbsp
  • 10 Medjool dates pitted
  • ½ cup vanilla protein powder
  • 2 tbsp chia seeds
  • ¼ tsp kosher salt
  • 2-4 tbsp almond milk
  • cup mini chocolate chips

Instructions
 

  • Line an 8x8-inch baking dish with parchment paper.
  • In a food processor, add the oats, peanut butter and dates and pulseuntil just combined.
  • Add the protein powder, chia seeds and 2 tablespoons of almond milk andpulse until well combined.
  • Transfer the mixture into a bowl and gently fold in the chocolate chips.
  • Place the mixture into the prepared baking dish and with your hands,press to smooth the surface.
  • Freeze for about 20-60 minutes or until set completely.
  • Cut into desired-sized bars and serve.

Notes

For a nice crunch, you can add ½ cup of pecans.
