Ingredients
  

  • Non-Stick Cooking Spray
  • 3 tbsp olive oil divided
  • 6(6-ounce) bone-in, skinless chicken thighs
  • as required salt and ground black pepper
  • 1 medium onion chopped
  • 2 tbsp garlic minced
  • 1 large carrot peeled and sliced
  • 1 small red bell pepper seeded and chopped
  • 1 small yellow bell pepper seeded and chopped
  • 10 ounces fresh mushrooms sliced
  • 8 fresh thyme sprigs
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh basil chopped
  • 1 tsp dried oregano
  • ½ cup black olives pitted
  • ½ cup red wine
  • 7 ounces Roma tomatoes halved
  • 1(28-ounce) can crushed tomatoes
  • 2 tbsp tomato paste
  • ½ tsp red pepper flakes crushed

Instructions
 

  • Season the chicken thighs with salt and blackpepper evenly.
  • In a heavy cast-iron skillet, heat 2tablespoons of oil over medium-high heat and sear the chicken thighs for about3-4 minutes per side.
  • With a slotted spoon, transfer the chickenthighs onto a plate.
  • In the same skillet, heat the remaining oil over medium heat and sauté theonion for about 4-5 minutes.
  • Add the garlic and cook for about 1 minute.
  • Add the carrot, bell peppers, mushrooms andherbs and cook for about 5 minutes.
  • Add the wine and cook for about 2-3 minutes,scraping up the browned bits from the bottom of the skillet.
  • Add the tomatoes, tomato paste, red pepperflakes, salt and black pepper and stir to combine.
  • Add the chicken thighs and stir to combine.
  • Reduce heat to low and simmer, covered forabout 40 minutes, stirring occasionally.
  • Stir in the olives and simmer for about 10minutes.
  • Serve immediately.

Notes

You can freeze leftovers in an airtight, freezer-safe container for up to 3 months.
