Instructions
Season the chicken thighs with salt and blackpepper evenly.
In a heavy cast-iron skillet, heat 2tablespoons of oil over medium-high heat and sear the chicken thighs for about3-4 minutes per side.
With a slotted spoon, transfer the chickenthighs onto a plate.
In the same skillet, heat the remaining oil over medium heat and sauté theonion for about 4-5 minutes.
Add the garlic and cook for about 1 minute.
Add the carrot, bell peppers, mushrooms andherbs and cook for about 5 minutes.
Add the wine and cook for about 2-3 minutes,scraping up the browned bits from the bottom of the skillet.
Add the tomatoes, tomato paste, red pepperflakes, salt and black pepper and stir to combine.
Add the chicken thighs and stir to combine.
Reduce heat to low and simmer, covered forabout 40 minutes, stirring occasionally.
Stir in the olives and simmer for about 10minutes.
Serve immediately.
Notes
You can freeze leftovers in an airtight, freezer-safe container for up to 3 months.
