Instructions
For vinaigrette: in a small bowl, allthe ingredients and beat until well combined.
In a large salad bowl, add thewatermelon, cucumber and mint and mix.
Place the vinaigrette and gently, toss to coat.
Top with the feta cheese and serve.
Notes
Honey can be replaced with maple syrup.
