Watermelon Cucumber Salad

An amazing combo ofwatermelon, cucumber, fresh mint and feta cheese…Sweet and tangy dressingpairs nicely with salad ingredients.

Ingredients
  

  • Non-Stick Cooking Spray
  • 2 tbsp fresh lime juice
  • 2 tbsp honey
  • 1 tbsp olive oil
  • pinch salt
  • 1 (5-pound) watermelon peeled and cut into cubes
  • 2 cups cucumber cubed
  • 3 tbsp fresh mint leaves torn
  • ½ cup feta cheese cubed

Instructions
 

  • For vinaigrette: in a small bowl, allthe ingredients and beat until well combined.
  • In a large salad bowl, add thewatermelon, cucumber and mint and mix.
  • Place the vinaigrette and gently, toss to coat.
  • Top with the feta cheese and serve.

Notes

Honey can be replaced with maple syrup.
