Air Fryer Latkes

These old-fashioned potato latkes are really awesome for breakfast!

Ingredients
  

  • ¾ lb russet potatoes peeled, grated and squeezed
  • ¼ medium yellow onion grated and squeezed
  • 1 large egg
  • 2 tbsp matzo meal
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • Non-stick cooking spray

Instructions
 

  • In a large bowl, add the potatoes, onion, egg, matzo meal, salt and black pepper and mix until well combined.
  • Make small 10 equal-sized patties from the mixture.
  • Grease the Air Fryer Basket with cooking spray and then slide inside.  
  • Adjust the temperature of Air Fryer to 375 °F to preheat for 5 minutes.
  • After preheating, arrange the patties into the greased Air Fryer Basket in a single layer.
  • Then spray the patties with cooking spray.
  • Slide the basket into Air Fryer and set the time for 16 minutes.
  • While cooking, flip the patties once halfway through.
  • After cooking time is finished, remove the latkes from Air Fryer and serve.
