Air Fryer Sweet Potato Pie

Ingredients
  

  • Non-Stick Cooking Spray
  • 1 (6-ounce) sweet potato
  • 1 tsp olive oil
  • 1(9-inches) prepared frozen pie dough thawed
  • ¼ cup heavy cream
  • 2 large eggs
  • 2 tbsp maple syrup
  • 1 tbsp butter melted
  • 1 tbsp light brown sugar
  • ½ tsp ground cinnamon
  • tsp ground nutmeg
  • to taste salt
  • ¾ tsp vanilla extract

Instructions
 

  • Grease the Air Fryer Basket with cooking spray and then slide inside.  
  • Adjust the temperature of Air Fryer to 400 °F to preheat for 5 minutes.
  • Coat the sweet potato with oil.
  • After preheating, arrange the sweet potato into the greased Air Fryer Basket.
  • Slide the basket into Air Fryer and set the time for 30 minutes.
  • After cooking time is finished, remove the sweet potato from Air Fryer and set aside to cool completely.
  • Peel the sweet potato and mash it completely.
  • Grease a pie pan with cooking spray.
  • Place the pie dough on to a floured surface and cut into 8-inch pie shell.
  • Arrange the dough shell into the prepared pie pan.
  • In a large bowl, add the mashed sweet potato and remaining ingredients and mix until well combined.
  • Place sweet potato mixture over the pie shell evenly.
  • Slide the Air Fryer Basket inside and adjust the temperature to 320 °F to preheat for 5 minutes.
  •  After preheating, arrange the pie pan into the Air Fryer Basket.
  • Slide the basket into Air Fryer and set the time for 30 minutes.
  • After cooking time is finished, remove the pie pan from Air Fryer and place onto a wire rack to cool for about 10-15 minutes before serving.
