Air Fryer Veggies Stuffed Bell Peppers

These meatless stuffed bell peppers are loaded with the flavors of vegetables, bread roll and cheese.

Ingredients
  

  • 6 large bell pepper
  • 1 bread roll finely chopped
  • 1 carrot peeledand finely chopped
  • 1 onion finely chopped
  • 1 potato finely chopped
  • ½ cup fresh peas shelled
  • 2 cloves garlic minced
  • 2 tsp fresh parsley chopped
  • as required salt and ground black pepper
  • Non-Stick Cooking Spray
  • cup cheddar cheese grated

Instructions
 

  • Remove the tops of each bell pepper and discard the seeds.
  • Finely chop the bell pepper tops.
  • In a bowl, place bell pepper tops, bread loaf, vegetables, garlic, parsley, salt and black pepper and mix well.
  • Stuff each bell pepper with the vegetable mixture.
  • Grease the Air Fryer Basket with cooking spray and then slide inside.  
  • Adjust the temperature of Air Fryer to 350 °F to preheat for 5 minutes.
  • After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
  • Slide the basket into Air Fryer and set the time for 25 minutes.
  • After cooking time is finished, remove the bell peppers from Air Fryer and serve.
