Plum Torte

An iconic recipe thatis a perfect way to use up summer plums… This recipe bakes a balanced sweettorte that is dense, light and super moist as well.

Ingredients
  

  • 1 cup unbleached flour sifted
  • 1 tsp baking powder
  • pinch salt
  • ¾-1 cup sugar
  • ½ cup unsalted butter softened
  • 2 eggs
  • 24 purple plum (pitted and halved) You can use more or less plums depending on the variety and size,
  • 1-2 tbsp sugar
  • 1 tsp fresh lemon juice
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat the ovento 350 °F.
  • Place the flour,baking powder and salt in a bowl and mix well.
  • Place the sugarand butter in another bowl and beat until creamy.
  • Add the flourmixture and eggs and beat until well combined.
  • Place the mixtureinto a springform pan evenly.
  • Arrange the plumhalves, skin side up on top of the flour mixture and sprinkle with sugarlightly.
  • Drizzle with lemonjuice and then sprinkle with cinnamon.
  • Bake for about 1hour.
  • Remove thespringform pan from the oven and place onto a wire rack to cool completelybefore serving.
