In a large bowl,add ½ cup of almond milk and sprinkle with gelatin evenly. set aside untilsoaked.
In a pan, addremaining almond milk, coconut milk, almond milk, Swerve, cacao powder, coffeegranules and stevia and bring to a gentle boil, stirring continuously.
Remove from theheat.
In a blender, addgelatin mixture and hot milk mixture and pulse until smooth.
Transfer themixture into serving glasses evenly and set aside to cool completely.
With plastic wrap,cover each glass and refrigerate for about 3-4 hours before serving.
Notes
Topping of whipped cream will enhance the taste of panna cotta.
