Instructions
Preheat your oven to 350 °F.
In a 10-inch cast-iron skillet, place the butter.
Place the skillet with butter in preheating for about 5minutes.
Carefully remove the skillet from oven.
Meanwhile, in a bowl, add the flour, baking powder, lavenderand salt and mix well.
Add 1 cup of sugar, milk, lemon juice, zest and vanilla and mixuntil well combined.
In another bowl, add the blueberries and remaining sugar andtoss to coat well.
Carefully remove the hot skillet with the melted butter fromoven.
Place the flour mixture into the buttered skillet evenly andtop with the sugared blueberries.
Bake for about 30 minutes or until the flour mixture has risenup and around the fruit.
Remove the skillet from oven and place onto a wire rack to coolslightly before serving.
Notes
Choose fresh blueberries that are dry and silvery looking.
