Ingredients
  

  • Non-Stick Cooking Spray
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • tsp baking powder
  • 1 tsp dried levender minced
  • ½ tsp salt
  • 1 cup granulated sugar plus 1 tbsp divided
  • 1 cup whole milk
  • 2 tbsp fresh lemon juice
  • 1-2 tsp lemon zest grated
  • 1 vanilla bean scraped
  • 2 cups fresh blueberries

Instructions
 

  • Preheat your oven to 350 °F.
  • In a 10-inch cast-iron skillet, place the butter.
  • Place the skillet with butter in preheating for about 5minutes.
  • Carefully remove the skillet from oven.
  • Meanwhile, in a bowl, add the flour, baking powder, lavenderand salt and mix well.
  • Add 1 cup of sugar, milk, lemon juice, zest and vanilla and mixuntil well combined.
  • In another bowl, add the blueberries and remaining sugar andtoss to coat well.
  • Carefully remove the hot skillet with the melted butter fromoven.
  • Place the flour mixture into the buttered skillet evenly andtop with the sugared blueberries.
  • Bake for about 30 minutes or until the flour mixture has risenup and around the fruit.
  • Remove the skillet from oven and place onto a wire rack to coolslightly before serving.

Notes

Choose fresh blueberries that are dry and silvery looking.
