Instructions
Preheat your oven to 350 °F.
In a 10-inch cast-iron skillet, melt the butter over medium-lowheat and remove from the heat.
Sprinkle brown sugar over butter evenly.
Arrange the plum halves over sugar in a single layer, cut sidedown. Set aside.
In a bowl, mix together the flour, baking powder and salt.
In another large bowl, add the eggs and beat until thick andlemon-colored.
Slowly add the sugar and beat well.
Add the flour mixture and mix well.
Add the water and lemon extract and beat until well combined.
Place the flour mixture over plums evenly.
Bake for about 40-45 minutes or until a toothpick inserted inthe center comes out clean.
Remove the skillet from oven and place onto a wire rack to coolfor at least 15 minutes.
Cut the cake into the desired-sized slices and serve.
Notes
Choose plums that are firm and plump without wrinkled skin.
