      Ingredients
        

      • Non-Stick Cooking Spray
      • ⅓ cup butter
      • ½ cup brown sugar
      • 2 lb medium plum pitted and halved
      • 2 large eggs
      • ⅔ cup white sugar
      • 1 cup all-purpose flour
      • 1 tsp baking powder
      • ¼ tsp salt
      • ⅓ cup hot water
      • ½ tsp lemon extract

      Instructions
       

      • Preheat your oven to 350 °F.
      • In a 10-inch cast-iron skillet, melt the butter over medium-lowheat and remove from the heat.
      • Sprinkle brown sugar over butter evenly.
      • Arrange the plum halves over sugar in a single layer, cut sidedown. Set aside.
      • In a bowl, mix together the flour, baking powder and salt.
      • In another large bowl, add the eggs and beat until thick andlemon-colored.
      • Slowly add the sugar and beat well.
      • Add the flour mixture and mix well.
      • Add the water and lemon extract and beat until well combined.
      • Place the flour mixture over plums evenly.
      • Bake for about 40-45 minutes or until a toothpick inserted inthe center comes out clean.
      • Remove the skillet from oven and place onto a wire rack to coolfor at least 15 minutes.
      • Cut the cake into the desired-sized slices and serve.

      Notes

      Choose plums that are firm and plump without wrinkled skin.
