Instructions
Preheat your oven to 375ºF.
Line a large-sized cookie sheet withparchment paper and then grease it with cooking spray.
In a bowl, blend together warm water and chiaseeds.
Set aside until thickened.
In a large food processor, add 1 cup of theoats and pulse until finely ground.
Transfer the ground oats in a large mixingbowl.
Add the remaining oats, baking soda, spicesand raisins and mix well.
Now in the blender, add the remainingingredients and pulse until smooth.
Transfer the apple mixture into the bowl withoat mixture and mix well.
Add the chia seeds mixture and stir tocombine.
With a cookie scooper, place the cookies ontothe prepared cookie sheet about 2-inch apart.
With the fingers of your hand, flatten each cookie slightly.
Bake for approximately 12 minutes or untiltop of cookies becomes golden brown.
Remove the cookie sheet from oven and placeonto a wire rack to cool for about 5 minutes.
Then invert the cookies onto the wire rack tocool before serving.
Notes
You can use chopped walnuts instead of raisins.
