Chicken with Zucchini Pasta

Ingredients
  

  • tbsp butter
  • lb boneless, skinless chicken thighs cut into strips
  • as required salt
  • 4 ounces fresh semi-dried tomato strips in oil chopped
  • ounces jarred sun-dried tomatoes in oil chopped
  • 4 cloves garlic crushed
  • cups heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tsp dried basil
  • ½-1 tsp red pepper flakes
  • 2 large zucchinis spiralized with blade C

Instructions
 

  • Melt the butter in a skillet over medium-high heat and cook the chickenstrips with a little salt for about 4-5 minutes or until golden brown.
  • Add both dried tomatoes, and garlic and sauté for about 1-2 minutes.
  • Add the cream and Parmesan cheese and stir to combine.
  • Immediately, reduce the heat to medium-low and simmer until the cheese ismelted, stirring continuously.
  • Stir in the basil, salt, redpepper flakes, and zucchini noodles and simmer for about 5-8 minutes oruntil desired doneness.
  • Remove from the heat and serve.

Notes

Look for zucchini that are firm and free of nicks and cuts.
