whole chicken
neck and giblets removed

Instructions
Preheat your oven to 400 °F.
Arrange an oven rack in the lower portion of oven.
Grease a large roasting pan withcooking spray.
Place the butter and garlic in a small pan over mediumheat and cook for about 1-2 minutes.
Remove the pan from heat and let it cool for about 2minutes.
Season the inside and outside of chicken evenly with saltand black pepper.
Arrange the chicken into a prepared roasting pan, breastside up.
Pour the garlic butter over and inside of the chicken.
Bake for about 1-1½ hours, basting with the pan juicesafter every 20 minutes.
Remove from oven and place the chicken onto a cutting boardfor about 5-10 minutes before carving.
Cut into desired-sizedpieces and serve.
Notes
Select a fresh raw chicken with a light pink color alongside the white pieces of fat.
