Chicken with Zucchini

A great way to use up summer zucchini in aweeknight dinner meal… Summary zucchini compliments chicken, lemon and parsleynicely.

Ingredients
  

  • 2 tbsp olive oil divided
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • as required salt and ground black pepper
  • 2 cloves garlic minced
  • lb zucchinis sliced
  • 2 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest finely grated
  • 2 tbsp fresh parsley minced

Instructions
 

  • In a large-sized wok, heat 1 tablespoon of oil over medium heatand stir fry chicken for about 6-8 minutes or until golden brown from allsides.
  • Transfer the chicken onto a plate.
  • In the same wok, heat remaining oil over medium heat and sautégarlic for about 1 minute.
  • Add zucchini and cook for approximately5-6 minutes,
  • Stir in chicken and cook for approximately 2 minutes.
  • Stir in lemon juice, zest and parsley and remove from heat.
  • Serve warm.

Notes

Cut the chicken breasts into uniform-sized pieces.
