Chicken, Dried Fruit & Olives Bake

A great and super simple-to-make dinner meal with outstanding flavors! Thepairing of dried fruit and olives shines the taste of chicken drumsticksnicely.

Ingredients
  

  • 6 ounces dried apricot quartered
  • 6 ounces prunes quartered
  • 4 ounces black olives pitted
  • 2 ounces capers
  • 2 cloves garlic crushed
  • 2 tbsp fresh oregano minced
  • as required salt and ground black pepper
  • 1 bay leaf
  • cup red wine vinegar
  • ¼ cup olive oil
  • 4(6-ounce) chicken drumsticks
  • 3 tbsp brown sugar
  • 3 tbsp brown sugar
  • ¾ cup white wine

Instructions
 

  • For marinade: in a large baking dish, add the apricots,prunes, olives, capers, garlic, oregano, salt, black pepper, bay leaf, vinegarand oil and mix until well combined.
  • Add the chickenbreasts and coat with the marinade generously.
  • Refrigerate,covered overnight.
  • Remove from therefrigerator and set aside in the room temperature for at least 1 hour beforecooking.
  • Preheat youroven to 325 °F.
  • Remove thechicken breasts from the bowl and arrange in a baking dish in a single layer.
  • Spread themarinade over the chicken breasts evenly and sprinkle with the brown sugar.
  • Place the whitewine around the chicken breasts.
  • Bake for about 50 minutes.
  • Serve hot.

Notes

You can also use green olives.
