Air Fryer Ratatouille

Grease a baking dish with cooking spray. Set aside.
Slide the Air Fryer Basket inside and adjust the temperature to 355 °F to preheat for 5 minutes.
In a large bowl, add the vegetables, garlic, Herbs de Provence, oil, vinegar, salt, and black pepper and toss to coat well.
Place the vegetable mixture into the prepared baking dish.
After preheating, arrange the baking dish into the Air Fryer Basket.
Slide the basket into Air Fryer and set the time for 15 minutes.
After cooking time is finished, remove the baking dish from Air Fryer and serve.
- When the vegetables are cooked, they shrink significantly, yielding roughly 2 cups of cooked vegetables, making this a terrific side dish.
- If you prefer to cook this in the oven, roast the vegetables at 450 degrees for 15-20 minutes.
