      Ratatouille Using an air fryer prevents the vegetables from becoming soggy while reducing the oil used. To use within the air fryer basket, you’ll need the baking attachment or an adjustable baking dish.

      What Are the Ingredients in The Ratatouille?

      Ratatouille is an easy-to-make colorful end-of-summer French stew. Tomatoes, eggplant, zucchini, onion, garlic, and colorful bell peppers are among the fresh ingredients that make this side dish special. Aside from the veggies, we add salt, peppers, Italian herbs, and vinegar to create a flavor in this recipe.

      Is It Healthy to Eat Air Fried Ratatouille?

      Air fried ratatouille is pretty nutritious because it is low in calories and carbs but high in beneficial fats. It’s also vegan and gluten-free, so you won’t have to worry about dietary restrictions when serving it to your guests.

      Tips

      • When the vegetables are cooked, they shrink significantly, yielding roughly 2 cups of cooked vegetables, making this a terrific side dish.
      • If you prefer to cook this in the oven, roast the vegetables at 450 degrees for 15-20 minutes.

      Ingredients
        

      • cooking spray
      • 2 multi-colored bell peppers, seeded and chopped
      • 1 eggplant chopped
      • 1 zucchini chopped
      • 3 tomatoes chopped
      • 2 small onions chopped
      • 2 cloves garlic minced
      • 2 tbsp Herbs de Provence
      • 1 tbsp olive oil
      • 1 tbsp balsamic vinegar
      • salt and pepper to taste

      Instructions
       

      • Grease a baking dish with cooking spray. Set aside.
      • Slide the Air Fryer Basket inside and adjust the temperature to 355 °F to preheat for 5 minutes.
      • In a large bowl, add the vegetables, garlic, Herbs de Provence, oil, vinegar, salt, and black pepper and toss to coat well.
      • Place the vegetable mixture into the prepared baking dish.
      • After preheating, arrange the baking dish into the Air Fryer Basket.
      • Slide the basket into Air Fryer and set the time for 15 minutes.
      • After cooking time is finished, remove the baking dish from Air Fryer and serve.
