Air Fryer Ratatouille
Ingredients
- cooking spray
- 2 multi-colored bell peppers, seeded and chopped
- 1 eggplant chopped
- 1 zucchini chopped
- 3 tomatoes chopped
- 2 small onions chopped
- 2 cloves garlic minced
- 2 tbsp Herbs de Provence
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper to taste
Instructions
- Grease a baking dish with cooking spray. Set aside.
- Slide the Air Fryer Basket inside and adjust the temperature to 355 °F to preheat for 5 minutes.
- In a large bowl, add the vegetables, garlic, Herbs de Provence, oil, vinegar, salt, and black pepper and toss to coat well.
- Place the vegetable mixture into the prepared baking dish.
- After preheating, arrange the baking dish into the Air Fryer Basket.
- Slide the basket into Air Fryer and set the time for 15 minutes.
- After cooking time is finished, remove the baking dish from Air Fryer and serve.
