In a large pan of salted boiling water, add the yuca pieces and cook for about 20 minutes.
Drain the yuca pieces and set them aside to cool.
After cooling, cut each yuca piece into fries.
Remove the tough center core out of each piece and discard it.
In a large bowl, add yucca fries, oil, dried herbs, spices, salt and black pepper and toss to coat well.
Grease the Air Fryer Basket with cooking spray and then slide inside.
Adjust the temperature of Air Fryer to 400 °F to preheat for 5 minutes.
After preheating, arrange the yucca fries into the greased Air Fryer Basket in a single layer.
Slide the basket into Air Fryer and set the time for 8-10 minutes.
While cooking, shake the basket once.
After ¼¼cooking time is finished, remove the yucca fries from Air Fryer and serve.
