      Can I use any cake with it?

      Any cake will work with this recipe—pound cake or angel food cake are trendy choices as they can easily be cut into layers without crumbling apart, as some other cakes might. However, if you’re feeling adventurous, feel free to try out different types of sponge cakes or even cupcakes! The choice is yours!

      Can I freeze my lemon curd cake?

      Yes! You can freeze your finished lemon curd cake after it has cooled completely and been frosted with appropriate icing (we recommend either cream cheese frosting or whipped cream). Put it in the freezer in an airtight container for up to two months for the best results. When ready to serve, thaw overnight in the fridge before enjoying!

      What other types of decorations can I use?

      • Frosting: Another frosting is cream cheese frosting, which is delicious and light but unstable on a hot summer day. To make the chilled lemon curd cake more heat stable, prepare a small amount of the buttercream you choose and frost it with it. You can immediately top the cream cheese frosting with frosting. Before frosting with buttercream, you can make it simpler by freezing the cake for 20 to 30 minutes.
      • Colors and sprinkles: To make the cake stand out, add some color using your preferred gel food colorings. You can also sprinkle some sugar pearls to decorate the cake to give it a more elegant look.

      Berries: Blueberries are a delicious way to top your cake because they go so well with the lemon flavor.

      Ingredients
        

      • 1¼ cups caster sugar
      • 1 cup unsalted butter softened
      • 3 large eggs
      • 1½-2 tsp lemon zest grated
      • ⅓ cup lemon curd
      • 2 cup self rising flour
      • 1 cup icing sugar
      • 2 tbp fresh lemon juice
      • 2 tbsp lemon curd
      • 1-2 tsp lemon zest grated
      • 1 lemon cut into thin slices

      Instructions
       

      • Preheat your oven to 350 °F.
      • Line an 8½-4½-inch loaf pan with baking paper.
      • In large bowl, add the sugar, butter, eggs and lemon zest and whisk until lightand fluffy.
      • Add the lemon curd and beat until well blended.
      • Add the flour and beat until well blended.
      • Place the mixture into the prepared loaf pan evenly.
      • Remove the cake pan from oven and place onto a wirerack to cool for about 10 minutes.
      • Then invert the cake onto the wire rack to coolcompletely before glazing.
      • For glaze: in a bowl, add the icing sugar, lemon juiceand lemon curd and beat until smooth.
      • Spread the glaze over the cooled cake evenly and sprinkle with lemon zest.
      • Garnish with lemon slices and serve.
