Chicken & Bell Peppers Kabobs
Ingredients
- ¼ cup balsamic vinegar
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- 2 cloves garlic minced
- ½ tsp dried thyme crushed
- ½ tsp dried oregano crushed
- 1 tsp ground cumin
- as required salt and ground black pepper
- Non-Stick Cooking Spray
- 2 lb boneless, skinless chicken breasts cubed into ½-inch size
- 4 large bell peppers seeded and cubed into 1-inch size
- 2 large onions quartered and separated into pieces
Instructions
- In a large bowl, add the vinegar, lemon juice, oil, garlic, dried herbs, cumin,salt and black pepper and mix until well combined.
- Add the chicken cubes and coat with mixture generously.
- Refrigerate,covered to marinate for about 2-4 hours.
- Preheat the outdoor grill to medium-high heat.
- Grease the grill grate with cooking spray.
- Remove the chicken from the bowl and discard the excess marinade.
- Thread the chicken and vegetables onto pre-soaked wooden skewers respectively.
- Place the skewers onto the grill and cook for about 10 minutes, flipping occasionallyor until desired doneness.
- Serve hot.
