      Our secret ingredient for the crispiest waffles is cornstarch. The cornstarch ensures that the waffles are crisp and tender. Baking powder and baking soda aid in the rise and browning of the waffles. I recommend using both for the lightest waffles possible.

      Is It Better to Have Soft or Crispy Waffles?

      The best waffles are crisp on the outside but fluffy in the middle, have a good flavor, and are drenched in real maple syrup (though admittedly that last part has nothing to do with technique).

      How Can I Keep Waffles Warm While Cooking?

      If you preheat your oven to 200 degrees, you will be able to place your waffles on a baking sheet in a single layer. Then keep it in the oven while you make your waffles.

      The leftover waffles freeze beautifully, can be stored in a freezer bag for up to 2 months, and can be resurrected with a quick trip to the toaster oven on a weekday morning, ensuring that a delicious waffly breakfast is not just a Sunday brunch thing.

      Ingredients
        

      • 2 eggs beaten
      • ½ cup mozzarella cheese shredded
      • 2 tbsp cream cheese softened
      • ½ tsp baking powder
      • 2 tsp strawberry extract
      • 4 fresh strawberries hulled and sliced
      • Non-Stick Cooking Spray

      Instructions
       

      • In a bowl, add all ingredients except for strawberry slices and beat untilwell combined.
      • Fold in thestrawberry slices.
      • Preheat a waffleiron and then grease it with cooking spray.
      • Place half ofthe mixture into preheated waffle iron and cook for about 4 minutes.
      • Repeat with theremaining mixture.
      • Serve warm.

      Notes

      You can serve these waffles with the drizzling of maple syrup.
