Fortunately, I discovered that tuna and potato cakes cook evenly when cooked in the air fryer, without sticking or overcooking!

Air Fryer Tuna & Potato Cakes
Ingredients
- ½ tbsp olive oil
- 1 onion chopped
- 1 tbsp fresh ginger grated
- 1 green chili seeded and finely chopped
- 2 (6-ounce) cans tuna drained
- 1 medium boiled potato mashed
- 2 tbsp celery finely chopped
- as required salt
- 1 cup breadcrumbs
- 1 egg
- Non-Stick Cooking Spray
Instructions
- Heat the olive oil in a frying pan and sauté onions, ginger, and green chili for about 30 seconds.
- Add the tuna and stir fry for about 2-3 minutes or until all the liquid is absorbed.
- Remove from heat and transfer the tuna mixture onto a large bowl. Set aside to cool.
- In the bowl of tuna mixture, add mashed potato, celery, and salt and mix well.
- Make 4 equal-sized patties from the mixture.
- In a shallow bowl, place the breadcrumbs.
- In another bowl, beat the egg.
- Coat each patty with breadcrumbs, then dip into egg and finally, again coat with the breadcrumbs.
- Grease the Air Fryer Basket with cooking spray and then slide inside.
- Adjust the temperature of Air Fryer to 390 °F to preheat for 5 minutes.
- After preheating, arrange the tuna cakes into the greased Air Fryer Basket in a single layer.
- Slide the basket into Air Fryer and set the time for 8 minutes.
- After 3 minutes of cooking, flip the tuna cakes.
- After cooking time is finished, remove the tuna cakes from Air Fryer and serve.
