      Ingredients
        

      • Non-Stick Cooking Spray
      • 5½ cups uncooked egg noodles
      • 3 tbsp olive oil
      • 3 shallots chopped
      • 3 small garlic cloves minced
      • ½ cup all-purpose flour
      • 2 cups chicekn broth
      • ¾ cup 2% milk
      • 1½ tsp dried thyme
      • ¾ tsp lemon zest grated
      • ¼ tsp ground nutmeg
      • ½ tsp salt
      • ¼ tsp ground black pepper
      • 5 cups rotisserie chicken cubed
      • 1½ cups frozen green peas
      • 2 cups Swiss cheese shredded
      • ¾ cups dry breadcrumbs
      • 2 tbsp butter melted

      Instructions
       

      • Preheat your oven to 350°F.
      • Grease a 13x9-inch baking dish with cooking spray.
      • In a pan of lightly salted boiling water, cook the pastafor about 8-10 minutes or according to package’s instructions.
      • Through a strainer, drain the pasta and then rinse withcold water.
      • In a large non-stick wok, heat oil over medium heat andsauté the shallots and garlic for about 45-60 seconds.
      • Stir in the flour and cook for about 1 minute, stirringcontinuously.
      • Add in the broth, milk, thyme, lemon zest, nutmeg, saltand black pepper and stir to combine.
      • Stir in the chicken cubes and peas and cook for about 2-3minutes or until heated completely.
      • Stir in the cheese and cooked noodles and remove from theheat.
      • In a small bowl, mix together the breadcrumbs and butter.
      • Place the chicken mixture into the prepared baking dishevenly and sprinkle with the breadcrumb mixture.
      • Bake for about 8-10 minutes or until top becomes goldenbrown.
      • Serve hot.

      Notes

      You can use cheddar cheese in place of Swiss cheese.
