Ingredients
- Non-Stick Cooking Spray
- 5½ cups uncooked egg noodles
- 3 tbsp olive oil
- 3 shallots chopped
- 3 small garlic cloves minced
- ½ cup all-purpose flour
- 2 cups chicekn broth
- ¾ cup 2% milk
- 1½ tsp dried thyme
- ¾ tsp lemon zest grated
- ¼ tsp ground nutmeg
- ½ tsp salt
- ¼ tsp ground black pepper
- 5 cups rotisserie chicken cubed
- 1½ cups frozen green peas
- 2 cups Swiss cheese shredded
- ¾ cups dry breadcrumbs
- 2 tbsp butter melted
Instructions
- Preheat your oven to 350°F.
- Grease a 13x9-inch baking dish with cooking spray.
- In a pan of lightly salted boiling water, cook the pastafor about 8-10 minutes or according to package’s instructions.
- Through a strainer, drain the pasta and then rinse withcold water.
- In a large non-stick wok, heat oil over medium heat andsauté the shallots and garlic for about 45-60 seconds.
- Stir in the flour and cook for about 1 minute, stirringcontinuously.
- Add in the broth, milk, thyme, lemon zest, nutmeg, saltand black pepper and stir to combine.
- Stir in the chicken cubes and peas and cook for about 2-3minutes or until heated completely.
- Stir in the cheese and cooked noodles and remove from theheat.
- In a small bowl, mix together the breadcrumbs and butter.
- Place the chicken mixture into the prepared baking dishevenly and sprinkle with the breadcrumb mixture.
- Bake for about 8-10 minutes or until top becomes goldenbrown.
- Serve hot.
