Chicken & Artichoke Casserole
Ingredients
- Non-Stick Cooking Spray
- 8(6-ounce) boneless, skinless chicken thighs
- as required salt and ground black pepper
- 2 tbsp olive oil
- 1(14-ounce) can quartered artichoke hearts drained
- 1(2½-ounce) can sliced black olives drained
- 1(15-ounce) can tomato sauce
- 2 cups Italian cheese shredded
Instructions
- Preheat your oven to 375 °F.
- Season the chicken thighs with the salt and black pepper evenly.
- In a large skillet, heat the oil over medium heat and cook the chicken thighs forabout 2-3 minutes per side.
- Remove from heat and arrange the chicken thighs into a 9x13-inch casserole dish in asingle layer.
- Top with the artichoke hearts, followed by the olives, tomato sauce and cheese.
- Bake for about 25-30 minutes or until chicken is done completely.
- Now,set the oven to broiler.
- Broil for about 2-3 minutes.
- Serve warm.
