      Ingredients
        

      • Non-Stick Cooking Spray
      • 8(6-ounce) boneless, skinless chicken thighs
      • as required salt and ground black pepper
      • 2 tbsp olive oil
      • 1(14-ounce) can quartered artichoke hearts drained
      • 1(2½-ounce) can sliced black olives drained
      • 1(15-ounce) can tomato sauce
      • 2 cups Italian cheese shredded

      Instructions
       

      • Preheat your oven to 375 °F.
      • Season the chicken thighs with the salt and black pepper evenly.
      • In a large skillet, heat the oil over medium heat and cook the chicken thighs forabout 2-3 minutes per side.
      • Remove from heat and arrange the chicken thighs into a 9x13-inch casserole dish in asingle layer.
      • Top with the artichoke hearts, followed by the olives, tomato sauce and cheese.
      • Bake for about 25-30 minutes or until chicken is done completely.
      • Now,set the oven to broiler.
      • Broil for about 2-3 minutes.
      • Serve warm.

      Notes

      Donot use marinated or pickled artichokes.
