      Ingredients
        

      • 1 lb chicekn breasts tenderloins
      • as required salt and ground black pepper
      • 2 tbsp olive oil divided
      • 12 ounces fresh brown mushrooms sliced
      • ½ cup yellow onion chopped
      • ⅔ cup sun-dried tomatoes chopped
      • 3 clovres garlic minced
      • 1 (14½-ounce) can cannellini beans drained and rinsed
      • 2 (14½-ounce) cans fire-roasted diced tomatoes
      • 1 tbsp sugar
      • 1 tsp dried thyme
      • 1 tsp dried oregano
      • 2 tbsp fresh parsley chopped

      Instructions
       

      • Season the chicken with salt and black pepperevenly.
      • In a large cast-iron skillet, heat 1tablespoon of oil over medium-high heat and cook the chicken tenderloins forabout 3 minutes per side.
      • With a slotted spoon, transfer the chickentenderloins onto a plate.
      • Cut the chicken tenderloins into bite-sized pieces.
      • In the same skillet, heat the remaining oilover medium heat and cook the mushrooms for about 5-7 minutes, stirringoccasionally
      • With a slotted spoon, transfer the mushroomsonto a plate.
      • In the same skillet, add the onionand sauté for about 3 minutes.
      • Add the sun-dried tomatoes and garlic andsauté for about 2 minutes.
      • Stir in tomatoes, sugar and dried herbs andstir to combine.
      • Place the chickentenderloins on top of beans mixture in a single layer.
      • With a spoon, place some beans mixture on topof the chicken and cook, covered for about 10 minutes.
      • Stir in the mushrooms and cook for about 1-2minutes or until heated through.
      • Serve hot with the garnishing of parsley.

      Notes

      This meal will be great if served with crusty bread.
