Ingredients
- 1 lb chicekn breasts tenderloins
- as required salt and ground black pepper
- 2 tbsp olive oil divided
- 12 ounces fresh brown mushrooms sliced
- ½ cup yellow onion chopped
- ⅔ cup sun-dried tomatoes chopped
- 3 clovres garlic minced
- 1 (14½-ounce) can cannellini beans drained and rinsed
- 2 (14½-ounce) cans fire-roasted diced tomatoes
- 1 tbsp sugar
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 tbsp fresh parsley chopped
Instructions
- Season the chicken with salt and black pepperevenly.
- In a large cast-iron skillet, heat 1tablespoon of oil over medium-high heat and cook the chicken tenderloins forabout 3 minutes per side.
- With a slotted spoon, transfer the chickentenderloins onto a plate.
- Cut the chicken tenderloins into bite-sized pieces.
- In the same skillet, heat the remaining oilover medium heat and cook the mushrooms for about 5-7 minutes, stirringoccasionally
