      Ingredients
        

      • 8 ounces whole wheat penne pasta
      • 2 tbsp olive oil
      • 1 lb boneless, skinless chicken breasts trimmed and cut into bite-size pieces
      • as required salt and ground black pepper
      • 4 cloves garlic minced
      • ½ cup chicken broth
      • 3 tbsp fresh lemon juice
      • 2 tsp lemon zest grated
      • 10 cups fresh spinach chopped

      Instructions
       

      • In a large pan of lightly salted boiling water, add the pasta andcook for about 8-10 minutes or according to package’s instructions.
      • Drain the pasta well.
      • Meanwhile,heat oil in a large high-sided skillet over medium-high heat and cook thechicken with salt and black pepper for about 5-7 minutes, stirringoccasionally.
      • Add garlic and cook for about 1 minute, stirring continuously.
      • Stir inbroth, lemon juice and zest; bring to a simmer.
      • Stir inthe spinach and cooked pasta and remove from the heat.
      • Immediately,cover the skillet and set aside for about 3-4 minutes before serving.

      Notes

      You can garnish this dish with shredded Parmesan cheese.
