What Causes Mug Cakes to Be Chewy?

The deal with your rubbery (or chewy or hard) mug cake is that you have overcooked it or used too much baking powder. With mug cake, less is more, so use only a pinch of baking powder. It will still rise nicely and be extremely soft and moist.

Is It Safe to Microwave Mug Cakes?

Yes! Mug cakes are safe to eat if you microwave them long enough to thoroughly cook the flour and any eggs in the recipe. Ensure you thoroughly cook it because raw flour can be dangerous, and this mug cake recipe also contains an egg.

Why Is My Mug Cake So Bitter?

If you used baking soda instead of baking powder without making any changes to your recipe, you would definitely get a bitter taste. Remember that baking soda is an alkaline, or base, ingredient with a bitter taste.

What Causes Mug Cakes to Bubble?

When heated, the powder’s ingredients react, resulting in bubbles. The key to a perfectly cooked cake (whether in the microwave or the oven) is to ensure that your architecture sets at the same time that your leavening agent—in this case, baking powder—forms air bubbles in the batter to cause it to rise.
