Ingredients
- Non-Stick Cooking Spray
- 2 large bell peppers halved lengthwise and seeded
- 2 cups cooked oatmeal
- 4 tbsp canned red kidney beans rinsed and drained
- 4 tbsp coconut yogurt
- ¼ tsp ground cumin
- ¼ tsp smoked paprika
- as required salt and ground black pepper
Instructions
- Grease the Air Fryer Basket with cooking spray and then slide inside.
- Adjust the temperature of Air Fryer to 355 °F to preheat for 5 minutes.
- After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
- Slide the basket into Air Fryer and set the time for 8 minutes.
- After cooking time is finished, remove the bell peppers from Air Fryer and set aside to cool.
- Meanwhile, in a bowl, add the oatmeal, beans, coconut yogurt, and spices and blend well. Stuff each bell pepper half with the oatmeal mixture.
- Again, grease the Air Fryer Basket with cooking spray and then slide inside.
- Adjust the temperature of Air Fryer to 355 °F to preheat for 5 minutes.
- After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
- Slide the basket into Air Fryer and set the time for 8 minutes.
