      Stuffed bell peppers are one of my favorite portion-controlled meals with a good balance of veggies and protein. You can season them any way you want. I’m creating oats and beans stuffed pepper right now. You may also flavor them with rice, chicken, or whatever else.

      So, if you’re seeking some delectable and nutritious comfort food, these are a must-have. You can enjoy stuffed peppers all year long now that you can make them without using an oven!

      Is it Possible to Freeze Stuffed Bell Peppers?

      Yes, stuffed peppers can be frozen by allowing them to cool, wrapping them separately in a synthetic bind, and keeping them in a freezer container. 

      Frozen peppers, however, are likely to get soggy and wet. As a result, I do not advise freezing stuffed peppers.

      What Are Some Good Side Dishes to Go With Air-Fried Stuffed Peppers? 

      I usually serve them with a big bowl of garden salads as a side dish. Here are some additional stuffed pepper side dish ideas:

      Why Use an Air Fryer to Make Stuffed Peppers? 

      Quick & simple: After filling the peppers, they just need to be air-fried for 16 min! Compared to baking in the oven, making them in the air fryer saves time. Clean-up is also a breeze!

      Low-calorie version: Using fresh salsa instead of a “cream of” soup in these peppers has various benefits. It lowers the calorie count while increasing the number of vegetables in the dish. You’ll get a Weight Watchers-friendly entrée low in calories, complete, balanced, and portion-controlled.

      Variations:

      You can customize the flavor of these peppers by changing the stuffing like chicken, rice, cheeses, meat, or different spices.

      These stuffed peppers with oatmeal and beans make a simple yet elegant meal for your dinner parties.

      Ingredients
        

      • Non-Stick Cooking Spray
      • 2 large bell peppers halved lengthwise and seeded
      • 2 cups cooked oatmeal
      • 4 tbsp canned red kidney beans rinsed and drained
      • 4 tbsp coconut yogurt
      • ¼ tsp ground cumin
      • ¼ tsp smoked paprika
      • as required salt and ground black pepper

      Instructions
       

      • Grease the Air Fryer Basket with cooking spray and then slide inside.  
      • Adjust the temperature of Air Fryer to 355 °F to preheat for 5 minutes.
      • After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
      • Slide the basket into Air Fryer and set the time for 8 minutes.
      • After cooking time is finished, remove the bell peppers from Air Fryer and set aside to cool.
      • Meanwhile, in a bowl, add the oatmeal, beans, coconut yogurt, and spices and blend well. Stuff each bell pepper half with the oatmeal mixture.
      • Again, grease the Air Fryer Basket with cooking spray and then slide inside.  
      • Adjust the temperature of Air Fryer to 355 °F to preheat for 5 minutes.
      • After preheating, arrange the bell peppers into the greased Air Fryer Basket in a single layer.
      • Slide the basket into Air Fryer and set the time for 8 minutes.
      • After cooking time is finished, remove the bell peppers from Air Fryer and serve.
