Ingredients
- Non-Stick Cooking Spray
- 1 cup all purpose flour plus 1 tbsp
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 large egg
- ⅓ cup granulated sugar
- ¼ cup canola oil
- 2 tbsp creamy peanut butter
- 2 tbsp sour cream
- 1 tsp vanilla extract
- 2 medium ripe bananas, peeled and mashed
- ¾ cups pecans roughly chopped
Instructions
- Grease a bread loaf pan with cooking spray. Set aside.
- In a bowl and mix together the flour, baking powder, baking soda, and salt.
- In another large bowl, add the egg, sugar, oil, peanut butter, sour cream, and vanilla extract. Beat until well combined.
- Add in the bananas and beat until well combined.
- Now, add the flour mixture and mix until just combined.
- Gently, fold in the pecans.
- Place the mixture into the prepared loaf pan.
