- 12 tbsp cold unsalted butter cubed
- 8-10 tbsp ice water
- 1 tbsp apple cider vinegar

- ⅓ cup Erythritol plus 1 tbsp
- 2 tbsp tapioca flour
- 1 tbsp ground cinnamon
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 egg
- 1 tbsp milk
Instructions
- For crust: in a large bowl, mix together theflour and salt.
- With a pastry cutter, cut in butter untilsmall pieces of butter remain.
- Slowly add about 5 tablespoons of ice water,mixing well with a wooden spoon.
- Add the vinegar and remaining ice water andmix until a dough comes together.
- With your hands, shape the dough into a rounddisc.

- For filling: in a bowl, add the apple slicesand remaining ingredients and toss to coat well. Set aside for about 20-3ominutes.

- Place 1 chilled dough disc onto a flouredsurface and sprinkle the top with some flour.
- Now, roll the dough disk into a 12-inchcircle.
