      Ingredients
        

      • Non-Stick Cooking Spray
      • 1 lb lean ground chicken
      • 2 ounces cheddar cheese grated
      • 2 tbsp almond flour
      • 2 tbsp golden flax meal
      • ½ medium red bell pepper seeded and chopped
      • 2 medium scallions chopped
      • 2 tbsp fresh cilantro chopped
      • 1 tsp fresh lime zest grated finely
      • 1 tbsp fresh lime juice
      • ½ tsp garlic powder
      • ½ tsp red pepper flakes crushed
      • 1 large avocado peeled, pitted and chopped
      • 1 tbsp fresh lime juice
      • ¼ tsp garlic powder
      • as required salt and ground black pepper

      Instructions
       

      • Preheat your oven to 350 °F.
      • Grease a large baking sheet with cooking spray.
      • Form eatballs: in a bowl, add all the ingredients and mix until well combined.
      • Make equal-sized meatballs from chicken mixture.
      • Arrange balls onto the prepared baking sheet and bake for about 15-18 minutes.
      • Meanwhile,for guacamole: in a bowl, add all ingredients and with a fork, mash until wellcombined.
      • Serve meatballs alongside guacamole.

      Notes

      To avoid tough and rubbery meatballs, gently shape the meat mixture into meatballs with oiled hands.
