- Non-Stick Cooking Spray
- 1 tbsp flax meal
- 2½ tbsp water
- ¼ cup dark chocolate chips plus 2 tbsp (divided)
- 2 tbsp coconut oil
- ¼ cup rolled oats
- ½ cup chocolate protein powder
- ½ cup cacao powder
- ⅔ cup chocolate almond milk
- ½ cup unsweetened applesauce
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- ½ cup fresh raspberries broken up into large pieces
Instructions
- Preheat your oven to 350ºF.
- Greasean 8x8-inch baking dish with cookingspray.
- In a large-sizedbowl, add the ground flax and water and mix well.
- Set aside forabout 5 minutes
- In a microwave-safebowl, place ¼ cup of chocolate chips and coconut oil and microwave on High forabout 1 minute, stirring after every 20 seconds.
- Remove the bowl of chocolate mixture from microwave and stir until just smooth.
- Place oats in a clean blender and pulse until a flour-like texture is formed.
- In alarge-sized bowl, add oat flour, vegan protein powder and cacao powder and mixwell.
- In thebowl of flaxseed mixture, add almond milk, applesauce, maple syrup and vanillaextract and whisk until smooth.
- Add the chocolate chips mixture and gently stir to blend.
- Place the brownie mixture into the prepared baking dish and with the back of a spoon,smooth the top surface.
- Place the remaining chocolate chips and raspberries on top and with a knife, swirlthem in the mixture.
- Bake forapproximately 18-22 minutes.
- Remove the baking dish from oven and placeonto a wire rack to cool completely.
- Cut into equal-sized brownies and serve.
