      Ingredients
        

      • 1 tbsp dried basil crushed
      • 2 tbsp lemon pepper
      • 1 tbsp poultry seasoning
      • as required salt
      • 2 tbsp olive oil
      • 1 large onion chopped
      • 2 medium celery stalks chopped
      • 1 bell pepper seeded and chopped
      • 6(1½-pound) Cornishgame hens

      Instructions
       

      • Preheat youroven to 375ºF.
      • Arrange 1 rackin each of 2 large-sized roasting pans.
      • In a bowl, blendtogether basil, lemon pepper, salt, and poultry seasoning.
      • Coat the henswith oil and rub with the seasoning mixture evenly.
      • In a bowl, blendtogether vegetables.
      • Stuff the cavities of hens with veggie mixture loosely.
      • Arrange hensinto prepared roasting pans, keeping plenty of space between them.
      • Roast for approximately 58-60 minutes or until juices run clear.
      • Check the internal temperature of the meat to ensure it is above 165°F.
      • Remove the hensfrom oven and transfer onto the serving plates.
      • With a piece off oil, cover each hen for about 10 minutes before serving.

      Notes

      Don't overstuff the hens.
