Air Fryer Cranberry Muffins
Ingredients
- ¼ cup unsweetened almond milk
- 2 large eggs
- ½ tsp vanilla extract
- 1 ½ cups almond flour
- ¼ cup sugar
- 1 tsp baking powder

- ⅛ tsp salt
- ¼ cup fresh cranberries
- ¼ cup walnuts chopped
Instructions
- In a blender, add the almond milk, eggs and vanilla extract and pulse for about 20-30 seconds.
- Add the almond flour, sugar, baking powder, cinnamon and salt and pulse for about 30-45 seconds until well blended.
- Transfer the mixture into a bowl.
- Gently, fold in the cranberries and walnuts.
- Place the mixture into 8 silicone muffin molds.
- Slide the Air Fryer Basket inside and adjust the temperature of Air Fryer to 325 °F to preheat for 5 minutes.
