Air Fryer Taco Casserole

- Non-Stick Cooking Spray
- 1 lb lean ground beef
- ½ cup bell pepper seeded and chopped
- 10 ounces canned diced tomatoes and green chilies with juices
- 3 tbsp taco seasoning
- ¼ cup water
- ⅓ cup heavy cream
- ¼ cup sour cream
- 4 large eggs
- ½ cup cheddar cheese shredded
Instructions
- Lightly grease a casserole dish with cooking spray. Set aside.
- Heat a non-stick skillet over medium heat and cook the ground beef for about 5 minutes.
- Drain the grease from skillet.
- Stir in the bell pepper, tomatoes, taco seasoning and water and cook for about 3-5 minutes.
- Remove from the heat and set aside to cool slightly.
- In a bowl, add heavy cream, sour cream and eggs and beat until well.
- In the bottom of prepared casserole dish, place the beef mixture evenly and top with egg mixture.
- Slide the Air Fryer Basket inside and adjust the temperature to 300 °F to preheat for 5 minutes.
- After preheating, arrange the casserole dish into the Air Fryer Basket.
- Slide the basket into Air Fryer and set the time for 20 minutes.
- After 17 minutes of cooking, top the casserole with cheese evenly.
- After cooking time is finished, remove the casserole dish from Air Fryer and serve.
